GAZPACHO SOUP

Ingredients:
- 1 red bell pepper, seeded, cored, cut into 1/2-inch pieces
- 1 yellow bell pepper, seeded, cored, cut into 1/2-inch pieces
- 1 cucumber, large, seeded and cut into 1/2-inch pieces, skin on
- 3 medium tomatoes, cut into 1/2-inch pieces
- 1 small red onion, cut into 1/2-inch pieces
- 1 cup baby spinach
- 1 jalapeno pepper, seeded and cut into 1/2-inch pieces
- 2 garlic cloves, minced
- 3 cups tomato juice
- 3 tablespoons red wine vinegar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- Flaxseed oil (optional)

Instructions:
- Prepare Vegetables: In a food processor, pulse chop each of the first 7 ingredients individually until they are roughly chopped into 1/4-inch pieces.
- Combine Ingredients: Transfer the chopped vegetables to a large bowl. Add the minced garlic, tomato juice, red wine vinegar, Worcestershire sauce, sea salt, and freshly ground pepper. Stir well to combine all the ingredients.
- Chill: Place the Gazpacho soup in the refrigerator for at least 2 hours or, ideally, overnight. This allows the flavors to meld together and the soup to become nicely chilled.
- Serve: When ready to serve, ladle the chilled Gazpacho into bowls. If desired, drizzle a small amount of Flaxseed oil on top for an extra layer of flavor and nutrition. Alternatively, garnish with finely chopped avocados for a creamy texture and added richness.
