CHICKEN TORTILLA SOUP

Ingredients:

  • 3 cloves garlic minced
  • ½ teaspoon allspice, ground
  • ½ teaspoon cumin, ground
  • 1 tablespoon chipotle peppers in adobo
  • 1 cup brown rice
  • 2 cups frozen corn kernels
  • 1 cup chopped spinach
  • 1 15 oz. can, black beans rinsed
  • 1 lb sweet potatoes peeled and cut in 1/2 inch piece
  • 10 6-inch corn tortillas
  • 3 tablespoons olive oil
  • 1 avocado, cut in slivers
  • 1 lime, cut in wedges

Instructions:
